This came about after enjoying a dirty chai coffee from Jaz at Shark Bait Coffee – next thing we were mixing chai powder with the oatmeal stout and the idea of a new recipe was born

This Version of the Pale India Ale features Mosaic as the Aroma hop, giving distinct passionfruit and grapefruit aromas and a rich flavour. There’s a story to this one …. Which translates to it cannot be repeated, so it is up to enjoy at our 2026 Passport to Malt & Mayhem event.
Back story = Every brewer’s nightmare: interruptions on brew day. While measuring hops, Craig was pulled away mid-process. When he returned, he couldn’t remember where he’d left off. In a moment of frustration, he sealed up the assorted hops, tossed them back in the freezer and started from scratch. That unexpected “mystery hop” blend found its way into the dry hop of this beer – and the result is a bold. hop-forward West Coast IPA bursting with herbal and fruit aromas, balanced bitterness and a crisp, dry finish.
The name adds another layer of meaning. Callum earned naming rights to this brew at our last Christmas party – and chose to name it after his and Crystal’s first-born.

KAFFIR LIME GOSÉ

Description
We have attempted to replicate Gosé by adding salt to the brewing water; souring over an extended period in the kettle with unmilled grain; adding coriander and Kaffir lime to the kettle and using a neutral yeast. The result is a beer that smells like a margarita cocktail … a little salty, definitely sour with a soft wheat malt finish. Winner of a Bronze Medal at 2019 Australian IBA Awards

Epic Mowing gave us kilos of spray-free mandarins, so what better way to say thank you than make a beer or two with them. This one we added pulp in the mash and then peel into the kettle. Finish it with a Belgian Wit yeast and you have a classic European Wheat beer with a Mandarin twist

A small batch featuring 100% Pacifica Hops from New Zealand and brewed with Lallemand’s new lager yeast – Novalager. The result is a light lemon aspen character with enough bitterness to make it sessionable
KVEIK OR THE DEAD HAZY IPA

Description
OK, It’s official the brewer has gone crazy! No bittering hops and a 3-hour whirlpool??? and then that crazy Norwegian Kveik (Quick) yeast and loads MORE HOPS. The result is an incredibly juicy, hazy NEIPA, full of flavour and taste …. well it tastes like full crushed pineapple juice.

Description
Craig was craving an easy drinking stout – something deep and delicious with lots of body without astringency of heavy roast barley. Something you could session on now the days are getting cooler. He studied the malts we had in stock and set to work on the pilot kit, to create a very lightly carbonated brew, to be finished and served on Nitrogen.
The result has exceeded expectations and created a visual experience as the nitro cascades in the glass.
